I might try to get some VR6 springs up front in addition to my spacer. In the back, I've read that a Passat spring will raise it 4" - probably almost too much, so I could just cut a coil. Should I disconnect the swaybars?

Yes!

Also, get the terbow for it to power over your obstacles.

A terbow is an entirely different matter.

If it's not raining tomorrow, I'm installing my spring spacers the easy way - between the coils - it won't lift it as much, but it will be something.

Got the rear coil spacers on. Not much lift that I can see, but the rear end is firm and doesn't bottom out anymore.
The fronts aren't going on unless I take the struts out. PITA! Maybe I'll try a different kind of spacer.

How much has it been lifted from stock?

i didn't measure. maybe .1"
what i had to do there was put the spacer between the coils, so it mostly just keeps it from compressing. in the front, i want to put the spacer under the spring to lift the whole thing.

they are these

I'll see if I can find out more about the B3 Passat springs. Supposedly, they will lift the rear of a MK2 Jetta 4", but I don't know how different my Mk3 is.

2001+ ES models have 5 lugs instead of 4, so I think Escort wheels are out.  Brakes are too big to fit 14" wheels, but 15" steelies will fit.  Bolt pattern is 5x114.3, which is common enough.  I still could turn it into a dirt monster!
