Supposing you have a 7" rim then, what do you want?  205/55?  205/50?  225/50?

My speedometer means nothing to me, so count that out of the equation.

Either one. Some people say 205s handle better on 7" rims than 225s.

These tires will be on my car if it makes it to the track, so help me out here.

I don't think you know what you're talking about.

Take a look at any racecar. Wider is better.
from what i undersand(could be wrong) wider tyres are used only to put the massive amounts of power down, but for handling, thinner tyres of stickier compound are better.

These tires seem to be a great value, and I was riding in a car with these, if not similar tires, last night, and they gripped like hell.  I'm liking them.

You are wrong.

Thinner tires can make the steering feel more crisp, but for quick lap times, wider is better.

Well, I was going to recommend these, but they may not be as economical for you since you aren't even sure you will be racing yet.

So I want 205/50s or 205/55s, IYHO?

These are 225/50-15s on 15x7s. Perfect size for autocrossing the 7.

The setup was recommended by a multi-time national champion who sets up a lot of race cars.

So 225/50R16s are fine on my 16x7 wheels then?

do you value pure grip or handling/response ?

Many racers say you win by cramming on the fattest tire that the rim will accept. I've also heard that doing this hurts grip.

you have to really go to the extreme to start to loose traction.  What ultimately ends up happening is during corner the sidewall/shoulder starts to get used for traction rather then the designed contact patch as the tire rolls over.

My personal thought is unless your at a national competition level, I'd choose a better feel over the tenth of a second advantage your giving up.  It just makes the experience more enjoyable IMO.

The car is going to still have 110 hp for at least the immediate future.  Wide tires look badass, but I have no idea how much they're going to accomplish on a car so slow.  I want it to be fun.

You're not talking the difference between 205s and 275s here. Just one size up, not even an inch difference in overall width. It will improve the grip, and the 50 series sidewall will allow good response and progressive breakaway vs a shorter sidewall. If you were contemplating going to 255s, 275s, or even 315s on your car, I'd avise you to stay away, but the 225s will work great on there both with the hp you're making now and with any improvements to the car you make later.

IMO wider tires look badass on a wide rim when the sidewall is straight up and down and not bulging (in which case i think it looks just like ass)... plus on a slow car larger tires will weigh more and slow you down more
