Don't they rev match downshifts in those, that alone should have helped him engine brake down under the limit.

They have a Hewland straight-cut box. It goes "meeeeeeeei |KLUNG| meweeeeeeeeuurr |KLUNG| maaaarrhhhhhhh" like an old rally car.
You could even get an HKS blow-off valve that makes that "chu-du-du" noise like Supras do. No they don't have a turbo, they just need a blow-off valve to let off all of that excess power if you get off the gas too quick.
