Yeah, the Death Star can destroy entire planets in one shot, but it isn't mean for fast moving targets like Borg Cubes.

Once the Borg boards the Death Star, it's basically over. Stormtroopers are pretty dumb, so it won't take much to assimilate all of them. A couple of guys with The Force might be able to escape, but they won't be able to stop the assimilation.
